Broccoli Slaw

It's been a while.




I won't go in to how long a while its been (exactly one year and two weeks), because nobody's counting, right? Right. Because I don't think there's anybody around. And that, everyone, is my fault. But we're not here to point fingers at people, are we?! Nooo.. We are here to decide possible options for dinner today, tomorrow, next week, and this is it. Well, actually, this is not dinner. But this is what you want to accompany your dinner, if your dinner is a BBQ, or some roast chicken or fish. Or eat it all and have it as dinner, we don't judge. Just like we don't blame.


Okay, okay, first recipe in more than a year, I'll shut up already. Enjoy.

Broccoli Slaw

Adapted from Smitten Kitchen
(Serves 4)

2 small broccoli heads
1 small red onion, chopped
50 grams slivered almonds, toasted
1 small garlic clove, crushed
150ml sour cream*
3 tablespoons mayonnaise
100ml yogurt*
Juice of half a lemon
2 tablespoons apple cider vinegar
2 tablespoons fresh parsley, chopped
Salt
Pepper

Trim the broccoli and chop it into large pieces. Cut each large piece into matchsticks. It's up to you if you want to use the stem or not (I did), but if you choose not to, use an extra broccoli head. You can do this in several ways: by hand (like above), using a mandoline, or using your food processor's slicing blade. Chuck it all in a bowl. Throw in the almonds and half of the red onion. It's up to you if you want to use the stem or not (I did), but if you choose not to, use an extra broccoli head, or else you'll have too much dressing!

Whisk the garlic, sour cream, mayonnaise, yogurt, lemon juice, vinegar and parsley in a bowl or measuring jug to make the dressing. Add some salt and pepper, pour the dressing over the broccoli, and toss well. Eat alongside whatever you fancy.

*If you only have sour cream, or only have yogurt, or have none and only have buttermilk, or have a little bit of all three or only two, fret not. All of them will work, but make sure you add a total of 250ml in total.
